More Information

In 2373, stewed bok-rat liver was served aboard the IKS Rotarran. Jadzia Dax exclaimed it wasn't very fresh, but it would be better with the bloodwine she had brought from Deep Space 9. (DS9: "Soldiers of the Empire") (Source: Memory Alpha)

The script describes the dish as "something vile and slimy."

The creation background of this word is a bit strange; In the script, the animal is written "bok-rat" which might imply it is kind of a rat. Having the word "rat" in the Klingon name makes it look like Okrand was not aware that this was kind of a rat and instead chose to just make a trancription of a word.
